Easy Christmas cake: Here’s a quick, homemade recipe
The season of warmth, gatherings, timeless traditions – and of course a lot of desserts is finally here and also the right time to capture the holiday spirit with the classic Christmas cake.
Packed with dried fruits, gently spiced, and finished with icing, the cake is shared with love.
Here’s a simple Christmas cake recipe for your festive centrepiece.
Assemble the dried fruits, nutsIn a glass jar, take dates, raisins, tutti frutti, mixed berries, figs, apricots, and soak them in grape juice, rum or any other beverage of your choice for atleast 8 hours.
Preheat the ovenWhile preheating the oven is necessary, you must also grease your cake tin with baking paper to prevent sticking.
Prepare the creamIn a large bowl, add the butter and sugar and beat them together until light and fluffy. This will also help provide the cake with a soft texture.
Mix the ingredientsIn the most crucial part, start adding your eggs and stir continuously before adding vanilla extract.
Mix the ingredientsOnce done, sift baking powder, flour, salt, clove powder, cinnamon powder, and baking soda together before adding the mix to the egg batter. Next, add the soaked dried fruits along with the remaining liquid. Mix everything until it is evenly combined.
Bake and decoratePour your batter into the prepared tin and smooth out the top layer. Bake for around 60-70 minutes or until you see the skewer coming out clean. Let the cake cool before final decorations. You can add a cherry or chocolate syrup on top with sprinkles, or simply serve it as freshly baked.
