Recipe For Tasty Achu Murukku / Rose Cookies

Bhubaneswar: Rose cookies or Achu Murukku is a Kerala based fried snack that is generally made during Christmas. It smells great and tastes divine.

It is a standard preparation in almost all Odia Christian homes. Each household has its own variation of this popular snack. It is also readily available in most of the grocery stores all over Odisha.

Let us learn how to make these tasty rose cookies at home with least effort and simple easily available ingredients.

Ingredients for Rose Cookies: 

  • 1. Refined flour (maida) 1/2 kilogram
  • 2. Coconut milk 1 cup
  • 3. Rice flour optional 250 grams
  • 4. Sugar 200 grams
  • 5. Eggs beaten 6
  • 6. Salt 1/2 teaspoon
  • 7. Vanilla essence 1 teaspoon
  • 8. Baking powder 1 teaspoon
  • 9. Oil for deep frying
  • Method: 

Combine maida, rice flour, coconut milk, sugar, eggs, salt, vanilla essence and baking powder. Mix well to form a smooth thick batter. Heat sufficient oil in a non stick pan. Dip the rose cookie mould in the hot oil and when hot enough, dip it half way into the batter and put it back immediately into the oil. Deep fry the cookies till crisp and separate them from the mould by shaking it lightly. Heat the mould again and repeat the process to make the remaining cookies.

Recipe Notes:

  • If the batter does not stick to the mould either the mould is not hot or the batter is too runny.
  • The batter should not be too runny or too thick.If its too thick,
    the murukku will become hard.If its too runny then the batter will not stick to the mould
  • Make sure you immerse the mould only till 3/4th
